Recently, my husband saw in some program an interesting version of scrambled eggs - kukyu scrambled eggs.
This is an Azerbaijani dish, to which many, many different greens are added.
Of course, we wanted to try such scrambled eggs.
Naturally, I do not pretend to prepare the classic version and, as always, this is my variation on the available products available in the refrigerator.
It turned out to be a very interesting breakfast option.
✅I needed the following products for 1 serving:
- 2 chicken eggs (60 g each),
- spinach - 35 g
- green onions - 20 g,
- soft cottage cheese - 50 g (or natural yogurt),
- suluguni cheese - 30 g or any semi-hard cheese you eat,
- salt, black pepper to taste.
✅Cooking.
Break the eggs into a bowl, soy and pepper them, add soft cottage cheese or natural yogurt.
And mix well.
Next, chop the green onions and spinach into smaller pieces.
In addition to onions and spinach, they use dill, parsley, and cilantro - all at the same time!
But for me this is too much variety of greenery.
We heat the pan - even a non-stick pan is better to grease with a drop of vegetable oil - it will literally be 1 gram.
Fry the greens for about half a mint until the spinach begins to shrink.
Next, pour the greens with the egg-curd mixture and cook over medium heat under the lid until tender.
When serving, sprinkle with grated cheese.
