New for us, but classic for the Northern European region, the Duchess HERRING appetizer in a Norwegian fur coat. There she is as popular as our Herring under a fur coat. But there are no potatoes, eggs or beets in the Norwegian "fur coat". It is lighter, fresher and more elegant.
The taste of slightly salted herring in this appetizer is perfectly set off by apple sourness, and almonds add a subtle nutmeg note.
Preparing a herring appetizer is not at all difficult. And on the table such a Duchess Herring looks gorgeous.

Ingredients:
- slightly salted herring - 1pc. (400 g)
- apples - 200 g
- almond nuts - 120 g
- thick yogurt without additives - 2 tbsp. l.
- mayonnaise - 2 tbsp. l.
- ground hot pepper - 1/3 tsp l.
Step by step recipe
1. First, cut the finished fillet of one herring, peeled from skin and bones, into portions. It is advisable to use lightly salted herring.
Put the sliced fillet on an oblong dish imitating the shape of a herring.
2. Cut one large sweet and sour apple into quarters and cut out the core. Peel the apples.

3. For a snack, you need about 120 g of almonds. Grind 80 g with a knife into smaller pieces, and leave 40 g of nuts for decoration.
4. Put the grated apple in a bowl and add the chopped almonds. We mix everything.
5. Put the prepared mass on the herring in a dense layer. It is most convenient to do this by hand.
6. Preparing the dressing.
We take 2 tbsp. l. thick unsweetened yogurt and add 2 tbsp. mayonnaise. Also pour in ⅓ tsp. ground red pepper. We mix everything.
7. Lubricate the herring with the prepared dressing under a fur coat from all sides.
From above, imitating the mantle of the Norwegian king, lay out the almonds, which were left in advance for decoration. We let the fish infuse in the refrigerator for a couple of hours and serve.
Duchess's appetizer Herring in a Norwegian fur coat turned out to be very tasty, although it is prepared quite quickly and not quite usually. It looks beautiful and festive on the table. Be sure to cook such a herring, I think you will like it too.
