If you want to please your loved ones with delicious pastries for tea, then prepare these delicate eclairs with curd filling. Yummy, lick your fingers! Just look how delicious they look:
Ingredients:
flour

cottage cheese or curd mass
yogurt
butter

Cooking choux pastry for eclairs. To do this, pour 1 glass of water into a saucepan and bring to a boil. Then add 100 grams of butter or baking margarine and remove from the stove. Put a pinch of salt and 1 glass of flour.
Stir the dough with quick movements until smooth. Stir until it stops sticking to the sides of the pan.
Then, one at a time, add 3 eggs to the dough. That is, one broke - stirred until homogeneous, broke the second - stirred.
The dough should be not steep in consistency, but not too liquid to drain from the spoon. Using a pastry bag or using a regular spoon, spread the dough on a baking sheet (cover with parchment).
Cooking eclairs in an oven preheated to 200 degrees. After 20 minutes, reduce the temperature to 170 degrees and cook a little more until golden brown.
To make the eclairs airy, you must not open the oven during baking. And you can't get them right away. Turn off the oven, let them stand for 5 minutes, then open the oven and let them stand for 5 minutes. And only then can they be removed.
While the eclairs are baking, let's prepare the filling. To do this, take 300 g of curd mass and beat or simply stir until smooth with 400 g of fruit yogurt.
Instead of curd mass, you can take regular curd and also mix with yogurt. But in this case, the cottage cheese then definitely needs to be whipped so that the cream turns out to be uniform and tender. If desired, you can add sugar to the cottage cheese to taste. Enjoy your meal!
