A recipe "out of nothing", because there are simple and affordable ingredients that you will always find in the kitchen. The cupcake turns out to be soft, airy, and what an aroma for the whole house! Delicious!

Ingredients:

dried apricots
raisins
flour
sugar
yeast
lemon juice
salt
powdered sugar
oil

The cake is made with yeast, so first we will prepare the dough. To do this, mix 1.5 teaspoons of dry instant yeast with 1 teaspoon of sugar and 1 tbsp. flour. Add 50 ml of warm water and stir. We remove it in a warm place until the mass increases by two or three times.

80 g dried apricots pour 1/2 cup boiling water for 15 minutes, then finely chop. You can also steam raisins for a few minutes, you will need about 50g.

Then we combine the dough, 1/4 teaspoon of salt, raisins, dried apricots and the water in which it was soaked, mix. Add sifted flour - 1 glass full and the second about 2/3. We knead the dough.

I want to say right away that the dough turns out to be sticky, and it seems as if there is not enough flour. This is as it should be, you do not need to add extra flour, otherwise the cake will not turn out soft and airy. Just grease the dough with vegetable oil and it won't stick to your hands.

Put the resulting dough in a greased mold and leave in a warm place. The dough will rise, so do not fill the form completely, but about 1/3. As soon as the dough rises two or three times, put it in a preheated oven.

We bake the cake at a temperature of 180 degrees for 30-40 minutes. You can leave the cupcake like this, or you can make the icing and pour on top. For the glaze, you need 50 grams of icing sugar and 1 tablespoon of lemon juice.

A little tip: the cake must first be cooled a little, and only then removed from the mold.
