Eggplant with mushrooms and garlic. Delicious, but cooking is simple

I've been cooking for the third day in a row, and we are not tired of this yummy yet. It is impossible to break away, we eat everything at once. Tasty, simple, and most importantly inexpensive - the ingredients are all simple and affordable. Prepare for your family, I'm sure your loved ones will appreciate it.

Ingredients:

champignons
eggplant
tomato
garlic
onion
salt
spice
vegetable oil
greens
* hot pepper optional

We need 2 medium eggplants. We cut them into cubes, also chop one onion.

We take 150 gr of champignons. If the mushrooms are small, then leave it right there, no need to cut it. And if large and medium, then we cut into halves or quarters.

Heat a small amount of vegetable oil in a frying pan and send eggplants with onions. Fry a little, and then add the mushrooms, 4-5 chopped garlic cloves, salt to taste and add your favorite spices. I only put black ground pepper. Cook for about 10 more minutes over medium heat. Do not forget to stir.

Then add 1-2 tomatoes, cut into small cubes. I recommend removing the skin, but if you want, you can leave it. Cooking for another 5-7 minutes. We taste it: if the vegetables are ready, then you can turn off the stove. If not, then cook for a few more minutes.

At the very end, a couple of minutes before cooking, add chopped greens. If you want to add piquancy and pungency to the dish, then you can add a little hot (hot) pepper.

The dish can be eaten as an independent hot dish, or it can be eaten cold as an appetizer - in any case, it is very tasty! Cook it today - you'll love it! Bon appetit, friends!
