How I dry eggplants for the winter. I share my way

I didn't know before that eggplant can be dried for the winter. But for about 3 years now, I have always been harvesting them for future use in dried form. My method is very simple, requiring little effort. I hope it will be useful to you too.

What you need:

  • eggplant
  • salt

So, we take ripe eggplants and cut them into slices approximately 1-1.5 cm thick. Sprinkle the eggplants with salt, mix with your hands and leave in this form for 20-30 minutes.

I think there is no need to explain why we need salt. But if suddenly someone does not know, then eggplants can give bitterness. And the salt "draws it out," and the eggplants will not taste bitter.

Now we rinse the eggplants with cold water and put them in a colander so that the excess water is glass. You can squeeze them out a little, just do not push hard!

Then put the eggplant colander in a pot of boiling water. And douse it with steam for 1-2 minutes. If you have a lot of eggplants, you can blanch them in boiling water rather than steam. The time is the same - no more than 2 minutes.

Now put the eggplants on a sieve for drying. I have a separate mosquito net for windows adapted for these purposes. We put the eggplants so that they do not touch.

Well, that's it, now you just have to wait for them to dry. I dry on the balcony, set the sieve (in my case, the mesh) so that there is also air access from below. Turn the circles over from time to time so that they dry evenly.

An important point: before you cook something from dried eggplants, they must first be soaked in water. Bon appetit, friends!
