Be sure to try this casserole - delicious! And most importantly, it is quick and easy to prepare. I found the recipe for this casserole several years ago in a tear-off calendar. I tried to cook it, and since then during the eggplant season I make this casserole often.
Ingredients:
Eggplant
Cheese
Garlic
Greens
Apples
Salt
Vegetable oil
Lemon juice
Take 4 medium eggplants and bake them whole in the oven. Eggplants are baked for 15-20 minutes at 160 degrees. Turn them over 2-3 times during baking.
While the eggplants are in the oven, prepare the rest of the ingredients. Chop 4-5 garlic cloves and mix with finely chopped herbs. I usually take dill and parsley.
Rub 2 apples on the finest grater. At first glance, it may seem that apples and eggplants are not very compatible. But I assure you: the taste will be simply divine!
Now we take the baked eggplant and cut them lengthwise into two parts. Put in a greased baking dish. Salt the eggplants on top to taste, lightly sprinkle with vegetable oil and lemon juice.
We spread a mass of garlic and herbs on the eggplant, and put grated apples on top. We cover the form with foil and send it to the preheated oven. Cook for 20 minutes at 180 degrees.
5 minutes before cooking, remove the foil, sprinkle the eggplant with grated cheese on top. You will need about 200 grams of cheese, no less. Once the cheese is melted and baked, the casserole is ready. The casserole can be sprinkled with fresh herbs before serving.
