To taste, you can't immediately understand that it is from pumpkin, it seems at first that it is apricot. Very tasty, fragrant, just fly away - cook it, you won't regret it! I'm sure your whole family will love this jam. Just look at what beauty:

Ingredients:

pumpkin
dried apricots
lemon or orange
sugar
pectin

The key to a good tasty jam in juicy pumpkin. Do not take fibrous, overripe, it will turn out to be completely different. So choose juicy varieties. We need 1 kg of pumpkin. Cut the pulp into small cubes of about 1x1 cm.

Cut one lemon together with the peel into thin quarters, remove the seeds. Instead of lemon, you can take one small orange, the taste is slightly different, but it will also be very tasty.

We wash 300 g of dried apricots, cut into small pieces and pour 2 cups of boiling water for 30-40 minutes, so that it becomes soft.

Then we take a suitable saucepan, pour into it the water in which the dried apricots have been soaked, and put it on the stove. Add 300 grams of sugar and cook until a clear syrup is obtained.

Add chopped pumpkin, lemon (or orange), dried apricots to it and cook all together, stirring occasionally, until the pumpkin becomes soft. Then add 2 teaspoons of pectin mixed with 1 teaspoon of sugar and cook for a couple of minutes.

We put the jam in the jars, wait for it to cool completely, and tighten the lids. After that, we put the jam in the refrigerator.

I advise you to try it after 2 weeks - during this time the pumpkin will be completely saturated with syrup and will taste like an apricot. The jam turns out to be very tasty, try it! Bon appetit, friends!
