Today, on the eve of Maslenitsa, I want to share one of my favorite options for meat filling for pancakes. It turns out very tasty, juicy, it is especially good in hot pancakes, as they say, in the heat of the day.
I'll start with the most versatile pancake dough recipe that works with just about any toppings, whether sweet or savory.
Dough:
3 eggs
1 glass of milk
1 cup flour (wheat flour, I've been using whole grain more often lately)
1 glass of water (maybe a little less, you need to focus on the thickness of the dough)
3 tbsp. tablespoons of vegetable oil
0.5 tsp tablespoons of salt
1 hour spoonful of sugar
Now the filling, I take minced meat, you can use any, I have chicken this time, you need about 500 grams. I fry the minced meat in a small amount of vegetable oil with the addition of finely chopped onions.
Further, while the minced meat is still hot, I add about 50-70 grams of cheese, grate it, and a fresh tomato cut into small cubes. I mix the filling well, if necessary, add more salt and black pepper.
Next, I fill the pancakes, wrap it in an envelope and lightly fry in a pan on both sides.
Eating such pancakes must be hot, the cheese will melt, and the tomato will add juiciness and freshness, very tasty๐.
