Today I will tell you about the recipe that one of my readers told me under one of the articles last year. I rewrote this recipe for myself and safely forgot. Having recently discovered it, I decided to cook it again and did not regret it: the roll turned out to be incredibly tasty, they ate it almost immediately, everyone, without exception, liked it.
Two medium-sized zucchini must be peeled and chopped with a grater. Salt a little and leave for a while for the zucchini to release its juice. Next, it must be well squeezed out of the liquid and placed in a bowl where the dough will be kneaded.
One small onion should be chopped as small as possible, as long as there is enough patience and added to the courgettes.
Next, add two eggs, salt and spices as desired. Chop the parsley finely.
Flour is also necessarily sent to the dough, I added oatmeal and mixed well.
Spread the resulting dough on oiled baking paper and align well. I send it to the oven preheated to 180 degrees for 30 minutes until the edges of the "cake" begin to brown.
In the meantime, you can start preparing the filling, for this three boiled eggs and cheese need to be crushed with using a grater, add to them one tablespoon of sour cream and two cloves of garlic squeezed through press. Salt everything and mix well.
After 30 minutes, I take the zucchini out of the oven and evenly distribute the filling, roll it tightly.
One edge of the "cake" must be left free.
I send the roll back to the oven for 10 minutes so that the cheese melts.
Then I take the roll out of the oven and let it cool for about 10 minutes, then cut it into portions. The roll is good both cold and hot.
