Grate potatoes coarsely.
While the potatoes are boiling, you can prepare the rest of the ingredients. I took smoked bacon and cut it into strips about 1 - 1.5 cm wide and sent it to a preheated frying pan without oil.
I cut one large onion into medium-sized cubes and send it to the bacon, which has already begun to fry.
Fry bacon and onions together until golden brown. It all depends on taste preferences, you can fry harder, or you can only until the onion is transparent.
I send the finished bacon and onions to the potatoes.
Then I add 2 tablespoons of sour cream, 1 tablespoon of mustard, salt to taste and a little spice, which are called "For potatoes". I mix well and add the grated cheese and mix well again.
I send the resulting mass into a baking dish and make small indentations with a spoon. Now I send the almost finished casserole to the oven preheated to 200 degrees for 15 minutes.
Next, remove the casserole from the oven and break one raw egg into each cavity. We send the baking sheet to the oven again until the eggs are ready. Here everyone decides for himself, you can only slightly cook the eggs and leave the yolk raw. I keep the casserole in the oven until cooked through.
And the result is a wonderful casserole. It tastes good either freshly cooked or reheated the next day.
