Do you often cook borsch? I quite often, at my house they love borscht very much, but I don't always have the time and desire to cook it. In order to free myself up time for more interesting activities or cooking something unusual, I make a big workpiece in the summer. We call it "Winter borscht". Having such a jar in her closet, the hostess does not spend a lot of time on cooking borscht, shredding vegetables and preparing "frying". You just need to boil the meat and cut the potatoes. Cooking begins as always with the preparation of the ingredients.
Peel carrots, onions, bell peppers and beets.
Chop the onion into strips, I rub the carrots and beets (I use a food processor for this).
Next, I pour one glass of vegetable oil into a saucepan with a thick bottom and fry the onion first, bringing it to transparency, then send carrots and beets to it.
I fry everything over medium heat for about 30 minutes. In the meantime, I am preparing tomatoes. The tomatoes, washed and peeled from the stalks, are passed through a meat grinder and put on fire, brought to a boil.
Then, without wasting time, I cut the bell pepper into thin strips.
After the onions, carrots and beets have softened, I add tomato paste to them.
By this time, chopped tomatoes have already been boiling for several minutes, you can send cabbage to them. I also shred it in advance using a food processor to save time.
Following the cabbage, peppers and "frying" of carrots, onions and beets are sent to the pan. Mix everything well and bring to a boil.
After the "Winter borscht" boils, you need to cook it for another 20 minutes. At the very end, I add 2 tablespoons of sugar and 100 grams of salt (this is 3 rounded tablespoons and 1 rounded teaspoon). Once again I mix everything well, pour it into sterilized jars, close it and wrap it with a blanket.
Ingredients: 3 kg of cabbage, 3 kg of tomatoes, 0.5 kg of carrots, 0.5 kg of onions, 0.5 kg of beets, 0.5 kg of pepper, 1 glass of vegetable oil, 270 grams of tomato paste, 2 tbsp. tablespoons of sugar, 100 grams of salt
From the specified number of ingredients, 12 cans with a volume of 0.7 liters are obtained.
