Today I will tell you about the very salad that we have been preparing for about a month for each of our gatherings with friends or neighbors. It is incredibly tasty, light, bright and very easy to prepare. I think many will appreciate this recipe and take it to their piggy bank.
The basis of the salad is eggplant, which can still be bought at a reasonable price. I took three medium sized pieces. I do not peel the peel, but only cut off the "ugliness". I cut them about 0.8 cm thick. Now they need to be fried, but so that they do not absorb a lot of oil, I do this:
I put the eggplants on a plate, salt and grease them with a brush on top and then put the greased side on a preheated pan. When the eggplant is fried on one side, only then I grease the other side with oil again and immediately turn it over. Thus, the eggplants are not greasy, but fried. If I had a grill pan, I would grill on it.
Before I start frying the eggplants, I put the red onion to marinate, pour it with vinegar mixed with water in equal proportions:
When all the eggplants are fried and slightly cooled, I cut them into strips about 1 cm thick. Further, everything is quite simple.
I need to prepare the pomegranate seeds, I use half a large pomegranate for this amount of eggplant. Of course, you need to chop the greens, ideally use cilantro, but parsley is fine too.
Now all the prepared ingredients need to be combined in a salad bowl, seasoned with olive oil and mixed well. I don't add salt because when serving on top I put Sirtaki cheese on top of the salad, it is quite salty.

Cheese "Sirtaki" 150 - 200 grams

Parsley or cilantro
