Today, a very unusual recipe that I found on the website of a famous nutritionist is "Hemocotlets". Their doctor recommends using them for people with anemia to increase the level of hemoglobin in the blood. In our family, fortunately, no one suffers from such a disease, but I was still interested in making them, these cutlets have a very interesting composition. And it turned out, I must admit, very tasty and juicy despite the absence of bread, milk and potatoes in the recipes.
So, since the site did not indicate the exact proportions and the recipe as such, but only the composition, I had to improvise and cook "by eye". I had minced meat (pork + beef 50/50) about 600 grams. I passed the minced meat again through the meat grinder and added one large onion weighing about 300 grams to it. Then I sent to the meat grinder the very main ingredient that makes their cutlets not only healthy, but also juicy:

The liver also needs to be minced along with meat and onions. I immediately add salt and pepper, I don't use other spices. Now you need to bring the minced meat to the desired consistency so that you can form cutlets from it.
To do this, I add whole wheat flour as indicated on the website. I added gradually so as not to overdo it, in general, it took me 6 tablespoons. The main thing here is not to overdo it, the minced meat should still keep its shape, but not be too dense.
Next, I took a heaped tablespoon of minced meat and sent it to bread crumbs (this is already my addition to the recipe). Hands rolled cutlets in breadcrumbs and sent to a baking sheet.
When working with minced meat, it may seem that it is slightly liquid, but this is not so, after baking in the oven, this will keep the cutlets juicy.
We send the cutlets to an oven preheated to 180 degrees for 40 minutes.
And believe me, despite their unprepossessing appearance, the cutlets are very tasty and soft with a crispy crust. Very tasty when combined with mashed potatoes.
Ingredients:
Minced meat 600 grams
Onion 300 grams
Chicken liver 400 grams
Whole-grain wheat flour 400 grams
Salt and pepper to taste
Breadcrumbs 3-4 tablespoons
