Delicate thin crumbly sandy crust, a huge layer of curd filling, cherries and coconut - this is really bliss!

And, today, I want to share with you the recipe for such a cake! The pie is good because it is very quick and easy to prepare.

And, here's what you need to cook:

For the test:
Butter - 100 g
Chicken eggs - 1 pc.
Sugar - 50 g
Baking powder - 1 tsp l.
Wheat flour - 190-200 g
For filling:
Cottage cheese - 400 g
Sugar - 100 g
Eggs - 3 pcs.
Corn starch - 3-4 tbsp. l.
Vanillin - to taste
Pitted cherries - 400 g
For crumb:
Coconut flakes - 80 g
Sugar - 70 g
Butter - 100 g
Flour - 150 g

Getting started cooking ...

We first take out the butter from the refrigerator - it should become soft. Then add sugar to it, one chicken egg and grind until smooth.

Then we sift the flour together with the baking powder and knead a soft dough very pleasant for the hands. You do not need to knead it for a long time, it is enough that the ingredients are gathered into a homogeneous mass.

We spread the dough in a suitable baking dish (22-24 cm in diameter), distribute with a thin layer with our hands along the bottom and make sides 5 cm high. And while the filling is being prepared, remove the mold with the dough in the refrigerator.

To prepare the filling, take fat cottage cheese, add chicken eggs, sugar, vanillin, 2-3 tablespoons of corn starch (we will add the last spoonful of starch to the cherry), and rub it with a whisk or crush until uniformity. If you have a hand blender, you can use it. It will take you 3 minutes to prepare the filling.

You will also need to cook the coconut streusel - this will also take you no more than 3 minutes. To do this, put all the ingredients for its preparation in one bowl, and rub into crumbs with your hands.

Add the remaining spoonful of cornstarch to the cherry and stir.

Now we take out the form with the prepared base for the cake from the refrigerator, put the cherry on the bottom first ...

Then fill in the curd filling and sprinkle with coconut streusel, evenly distributing it over the entire surface.

We bake the cake in the oven for about 40-45 minutes, preheated to 180 degrees. Before cutting the pie, it needs to be allowed to cool down a little - when hot, the curd filling is blurry. And in the cooled form, the pie is cut into even beautiful pieces. Cook, taste, enjoy your tea!
