In everyday cooking time, we often forget about offal. And today I will tell you how I fry beef liver with onions, which I do not bread in flour or soak in milk, and at the same time it always turns out to be very soft and tasty. And everything is done very quickly!

Cooking ingredients:

Liver - 700-800 g, you can take a kilogram
Onions - 2-3 pcs.
Salt, black pepper - to taste
Sour cream - 2-3 tbsp. l.
Mustard (ready-made) - 1 tsp l.
Vegetable oil - 3-4 tbsp. l.

Let's get started ...

We take the liver... We wash, remove unnecessary streaks, and this, in principle, is all preparation.

Now we cut the prepared liver into cubes / or strips the size of a little finger. And, then, while we do nothing with it - do not pepper, do not salt. It's just that some immediately begin to salt the liver, But this is absolutely impossible!!! - the liver will become stiff!

Peel the onion and cut into half rings. I take a small amount of onions, but everything is individual here... If you like a lot of onions, then take a lot of onions! They say onions add juiciness - and I do not argue with that, but this is a matter of taste.

Now we take a frying pan, pour in vegetable oil, turn on a strong fire, heat up the oil and lay the liver. Yes, yes, some will argue that you need to fry the onion first, then remove it... But I think the opposite - first you need to fry the liver! And, be sure to do it over high heat - 5 minutes is enough for the liver to brown.

Now put the onion, mix.

Again, fry over high heat for 2 minutes, then turn down the fire. Add sour cream, a teaspoon of mustard and only at this stage salt and pepper.

Stir, turn off the fire for another minute, cover the pan with a lid, and let the liver simmer for 5 minutes! The liver is very soft and tender. Cook, taste, Bon appetit!
