Today I am cooking... Fresh cucumber pancakes!
Today I want to offer you a recipe for unusual pancakes, which are made from fresh cucumbers. I'm trying this recipe for the first time, but I can say with confidence that now from time to time I will add this dish to my menu.
The recipe is very simple to prepare, the pancakes are very tasty. And in the summer season, when the cucumbers are already beginning to ripen, this recipe will be more appropriate than ever.
Cooking ingredients:
Cucumbers - 1 pc. long, medium size
Chicken eggs - 3 pcs.
Kefir - 250 ml
Salt - 1/2 tsp l.
Baking powder - 1 tsp l.
Flour - 250-280 g
A little vegetable oil for frying pancakes
Let's get started ...
Grate one long cucumber (or several small cucumbers). You don't need to squeeze out the juice.
Divide chicken eggs into yolks and whites, immediately add the yolks to a bowl with grated cucumbers.
Next, pour in kefir, add salt and you can add some spices to your taste, mix.
Sift the flour together with the baking powder.
You should have a fairly thick dough, in principle, like regular pancakes.
Beat the separated proteins with a mixer until a stable fluffy mass is formed.
Add the whipped egg whites in several steps to the bulk, and mix with a spatula. We do everything quickly, but carefully so that the proteins do not settle. In principle, everything is done in the same way as when preparing ordinary pancakes.
Cucumber pancakes are fried in a small amount of vegetable oil to the sides, until golden brown, and this is done over medium heat, and always with a closed lid. Cook, taste, Bon appetit!
