There is hardly a person who will refuse delicious lush, ruddy homemade pies.

Today I want to tell you how I cook fluffy pies on kefir, which do not absorb oil at all when frying. The pies are not at all greasy, I add oil to the pan only once and fry the whole batch of pies - and there are a lot of them!

Ingredients for making pies:

For the test:
Kefir - 500 ml
Chicken eggs - 1 pc.
Sour cream - 2 tbsp. l.
Salt - 1/2 tsp l.
Baking powder - 2 tsp l.
Flour - 600-700 g
The filling can be absolutely any - in my case, boiled chicken eggs and green onions
And some vegetable oil for frying pies

Let's start cooking ...

In a spacious bowl, suitable for kneading dough, break the egg, add two tablespoons of thick sour cream.

Pour in kefir at room temperature, add salt. Whisk with a whisk until smooth.

We measure out 600 grams of flour, mix with baking powder, and sift into a bowl with kefir mixture.

First mix the dough with a spoon, moisten all the flour. Then, when it thickens enough, put it on the table and begin to knead with your hands. At the beginning of kneading, the dough will be heavy and sticky, but do not add flour yet. We knead it well for several minutes, and then add a little more flour if it is too sticky. In principle, the dough will be a little sticky, but in moderation. Let the dough rest for 10-15 minutes.

The filling for the pies can be made in advance - I have hard-boiled chicken eggs that I cut into small cubes, add a small bunch of chopped green onions, salt and pepper taste.

When the dough has rested, we divide it into pieces weighing about 50 grams. We round it off, let it rest for a few minutes.

Then we roll each piece into a flat cake, 0.5 cm thick, put a little filling in the middle and pinch the edges, forming pies.

Pour oil into the pan so that you no longer add oil during frying. We heat well over a fire slightly stronger than medium, if the heating is insufficient, the pies will not turn out fluffy and will absorb a lot of oil. We spread the prepared pies in the heated oil and fry on 2 sides, for about 3 minutes, until a characteristic golden brown crust is formed. Cook, taste, Bon appetit!
