In our local market there are several stalls with pastries, but the most delicious ones are from grandmothers who also come to the market to sell their pastries!
Today I want to bring to your attention recipe for delicious pies - these are the ones that those grannies sell in our market and for some reason they call them "Lapty". Where did the name come from for the pies, did not specify, but learned the recipe. Now I am sharing with you.
Cooking ingredients:
For the test:
Kefir - 250 ml
Chicken egg - 1 pc.
Sugar - 1 tbsp. l.
Salt - 1/2 tsp l.
Soda - 1/2 tsp l.
Flour - 400 g
Sunflower oil - 4 tablespoons l.
For filling:
Potatoes - 1 kg
Onions - 2-3 pcs.
Salt, black pepper to taste
Vegetable oil - for frying onions and pies
Getting started cooking ...
First, we prepare the filling, because the dough is done no more than 10 minutes and does not require proofing. Peel the potatoes and cook in slightly salted water until cooked, as if on mashed potatoes.
In the meantime, peel the onions, chop finely and fry in a small amount of vegetable oil until golden brown.
Knead hot boiled potatoes with a pusher, then add the fried onions, pepper a little, add salt and mix if necessary.
Now we are preparing the dough. Pour kefir into a deep bowl, add salt, sugar, soda, pour in vegetable oil and develop an egg. We mix everything.
Add the sifted flour in parts and knead the dough, it will turn out to be quite sticky. When working with it, you can grease your hands with oil so that it does not stick much, but you do not need to add additional flour - the pies will turn out tough.
Now sprinkle the working surface of the table with flour, divide the dough into 10-12 parts.
We round each piece, and then flatten it simply with our hands into a round cake. In the center we put 1-1.5 st. l. fillings.
Pinch the edges, forming a regular patty.
Then we turn it over with the "seam" down and gently roll it out with a rolling pin or flatten it and stretch it with our hands. Hence, probably the name, because now the pies are big, like bast shoes.
We fry pies as usual! In a frying pan, add a small amount of vegetable oil on 2 sides until golden brown. Cook, taste, Bon appetit!
