If you like yeast dough pastries, then you should try to bake pies according to this recipe. They turn out to be unusually tasty, rich, sweet and remain soft, fresh even on the second day, as soon as after baking!

Before preparing the dough, be sure to sift the flour, it is enriched with oxygen and the baked goods are airy and soft.

Ingredients for the dough:

Warm milk 300ml
Dry yeast 11g (pressed 30g)
Sugar 120g
Butter 200g
Egg yolks 3-4 pcs
Flour 650-670 g
Vanilla sugar 10g
Salt 1/3 tsp
Eggs 1pc for greasing pies

Make a dough for the dough, mix all the yeast, sugar 2 tablespoons, 150ml warm milk (30 degrees), flour 5-6 tablespoons.

Stir. Dough in terms of density should turn out like a dough for pancakes. Cover with cling film and send to a warm place for 20-30 minutes, the dough should rise with a foam cap.

If the dough has not risen, then the yeast is not of high quality and the pies will not work.

While the dough fits in another container, mix the rest of the sugar, vanilla sugar and a pinch of salt.

Separate the yolks from the whites and add to the dry ingredients. Whisk for a couple of minutes.

Then pour in the melted butter 200g and the rest of the warm milk 150ml. Stir.

When the dough increases and a frothy cap appears, stir and add the liquid mass.

Then add flour in parts, mix with a spoon, and then knead the thick dough with your hands for 10-15 minutes.

The dough should be elastic, soft, beat well into a lump and not stick to your hands.

Grease a bowl with vegetable oil, transfer the dough. Send to a warm place for 30-40 minutes to increase in volume.

The dough has risen, knead it and again send it to a warm place, when it rises again, knead it well a second time and start forming the pies.

Divide the dough into pieces, form a ball weighing 65-70g, then make a cake by stretching the dough with your hands, put the filling in the center (apples 800g + sugar 8 tbsp, cinnamon 0.5 tsp optional), connect the edges and pinch well with your fingers, form a patty.

Place the patties on a baking sheet with parchment paper, seam side down, spaced apart.

Leave the formed patties on a baking sheet in a warm place to rise slightly for 20-30 minutes. Brush with a beaten egg before baking.

Send to a preheated oven to 180 degrees for 25-35 minutes. Baking time depends on the size of the patties and the oven.

Fragrant, airy pies are ready, let cool and you can taste. Bon Appetit everyone!
