Secrets of making lush dumplings with cherries

Dumplings with berries are an irreplaceable dish of the summer season. I will share my secrets how to cook delicious, fluffy, airy dumplings with steamed berries. This is my favorite and simple proven recipe.

Ingredients:

Kefir 0.5l
Sugar 3 tbsp flat
Salt 0.5 tsp
Baking soda 1 tsp with a slide
Egg 1pc
Flour 700g + 50 for rolling dough
Filling: Cherries, strawberries, blueberries, raspberries, wild strawberries, currants. Sugar Butter 50g

The dough can be prepared on kefir with a fat content of 2.5% or homemade sour milk.

I add an egg (preferably a homemade egg), salt, sugar and baking soda to kefir at room temperature. It is not necessary to quench soda with vinegar, it is quenched in an acidic environment, makes the dough fluffy and airy. I stir all the ingredients with a spoon.

I add parts sifted flour (it is enriched with oxygen and the dough will be airy), I knead the dough at the beginning with a spoon, and then with my hands. Do not add more flour than in the recipe, otherwise the dough will be rubbery.

The secret of delicious dumplings is that the dough should be soft and elastic after kneading. Immediately start rolling.

I roll it out with a rolling pin, the dough is 0.4-0.5 cm thick. I squeeze the mugs out with a glass or a round cookie cutter. The diameter of the mug is 6-7cm. I collect the rest of the dough in a lump, then roll it out again with a rolling pin.

I take a circle in my palm, slightly stretch the dough. I put sugar in the center of the dough, and then 3-4 cherries, pinch tightly with my fingers so that the juice does not flow out. I make dumplings as much as it can fit for cooking on a container in which dumplings will be cooked (5-6pcs)

Steamed dumplings can be cooked in a double boiler, a saucepan with cheesecloth or a dumpling maker.

The easiest and most affordable way of steaming is a saucepan + cheesecloth. I pour about 1/3 of the capacity into the pot. Water can always be added later if it evaporates.

I spread the dumplings at a distance from each other. Be sure to cover with a tall bowl so that the dumplings rise up and do not stick to the walls.

You need to steam the dumplings no more than 5-6 minutes so that they remain airy and soft, and not rubbery.

While the dumplings are boiling, I prepare the second batch for cooking.

I grease the finished hot dumplings with butter and sprinkle with sugar lightly so that they do not stick together.
