Chocolate cupcakes with cherries
- Bring the cream to a boil. When bubbles appear, immediately remove the cream from the heat and pour over the caramel sugar.
- Mix everything well until completely dissolved and remove the cream in the refrigerator until it cools completely, at least for a couple of hours.
Prepare the mold and preheat the oven to 175 ° C.
- Sift flour.
- Add all dry ingredients to flour: cocoa powder, salt, baking powder, soda.
- Stir the sugar and butter and beat.
- Add eggs one at a time, stir each thoroughly.
- Add vegetable oil.
Food must be at the same room temperature.
- Add kefir, vanilla paste or vanilla sugar.
- Add all dry ingredients.
- Mix everything at the minimum speed of the mixer until smooth.
- Switch off the mixer and stir the dough with a spatula.
- Divide the dough into molds, each filling three quarters.
Send to oven for 20 minutes.
- Remove ready-made muffins and cool.
- Cut out the middle of the muffins.
- Fill holes with thick jam or confiture.
- Mix the chilled cream with the cream cheese and beat until smooth.

200 g flour
30 g cocoa powder
5 g (1 tsp) baking powder
3 g (0.5 tsp) baking soda
2 eggs
110 g sugar
70 g soft butter
50 g vegetable oil
200 g kefir
Cream:
150 g cream 33-35%
300 g cream cheese
50 g caramel sugar (icing sugar)
Confiture or thick jam:
100 g berry puree
1-2 tsp sugar
1 tsp corn starch
