Raspberry marshmallow without boiling
- Beat the egg whites until fluffy.
- Add sugar in portions and beat everything together.
- Add a teaspoon of lemon juice at the end.
- Mix water and raspberry puree in a saucepan and add agar-agar.
- Prepare the parchment surface where you will plant the marshmallows.
- Prepare piping bag and nozzle.
- Put the puree on the stove and bring to a boil. When the agar-agar dissolves, the mass thickens.
- Then add sugar and add glucose syrup.
- Boil the syrup to a temperature of 103-104 ° C degrees.
- Pour the syrup into the beaten egg whites.
- Beat until the mixture stabilizes.
Put the mass in a pastry bag and deposit the marshmallows.
Send marshmallows to a dry ventilated area.
It takes a day to stabilize the marshmallow.
- The finished marshmallow can be sprinkled with powdered sugar.
- Fasten similar halves together.
- After that, it is advisable to give it another 6-8 hours for final drying.
