I took frozen cherries as a berry component.

RECIPE OF A MEDOVIK WITH SOUR CREAM

  • Mix cherries with sugar and wait until they give juice.
  • Add 2 g of NH pectin to the sugar. If there is no pectin then corn starch 10 g is used.
  • Mix pectin and sugar thoroughly.
  • Place the cherries on the stove and turn on a little heat.
  • When the cherries are completely defrosted, pour in the pectin and sugar in a little rain. Bring to a boil, stirring constantly.
  • When the puree has boiled, add a teaspoon of lemon juice or 1 g of citric acid.
  • Warm up for half a minute and the heating can be turned off.
  • Cover the cherries with foil in contact so that they do not dry out.

Dough for cake honey

  • Line a baking sheet with parchment.

Preheat the oven to 190 ยฐ C degrees.

  • Stir the eggs.
  • Stir honey with refined vegetable oil.
  • Mix flour with cocoa powder. Add baking soda and baking powder here.
  • Beat eggs while gradually increasing the speed.
  • Gradually add sugar in several steps with a rain and beat until it is completely dissolved.
  • The mass needs to be stable.
  • Sift half of dry ingredients and stir into eggs.
  • Add honey with vegetable oil and the remaining dry ingredients.
  • Finally, gently mix everything with a spatula and immediately pour onto a baking sheet.

Send to oven for 10 minutes.

  • The finished biscuit must be very carefully turned over and the paper gently removed from it.
  • Finally, I moved it to a grate to prevent the bottom from getting wet.

CREAM FOR CAKE MEDOVIKA

  • For the cream, beat in soft butter. I will do sour cream, the recipe is already on the channel.
  • Gradually add condensed milk literally by spoon.
  • Add each next portion of condensed milk only after the previous one has been mixed. It is very important.
  • At this point, enter flavoring - coffee extractwhich I did recently.
  • Add cream cheese, followed by sour cream.
  • Stir first, then beat.
  • As soon as all the mass has come together - do not beat any more, the sour cream should be cold.
  • You can refrigerate the cream to stabilize it.
  • Trim the sponge cake around the edges so that it is even and divide into 4 pieces.
  • The result is four wonderful cakes.
  • Dry the leftovers for decoration. Walnuts can be dried along with crumbs.
  • Grind the crumb and nuts in a blender.
  • Chocolate honey biscuit can be soaked with syrup if desired.

ASSEMBLY

  • Grease the biscuit with cream and put the next one on it.
  • Make a border of cream and add cherries.
  • Apply a layer of cream and put on the next cake, etc.
  • Decorate the honey cake with decor.
  • Give it a couple of hours to stabilize in the refrigerator.

Honey cake dough:

90 g flour
20 g cocoa powder
4 g baking powder
2 g soda
50 g honey
20 g vegetable oil
200 g eggs
90 g sugar

Sour cream for honey cake:

100 g butter
150 g condensed milk
1 tsp coffee extract (optional)
120 g cream cheese
200 g sour cream 30% or weighed

Cherry confiture (you can take jam or thick jam)

200 g frozen cherries
30 g sugar
2 g NH pectin or 10 g corn starch
