- Pour olive oil into the bottom of a saucepan and heat.
- If the pot has a thin bottom, it is best to fry the vegetables in a skillet.
- Put the onion in the heated oil and fry it a little.
- Add garlic here, then the celery stalk and also lightly fry.
- Then add celery root and potatoes.
- Pour hot water up to about half the level of vegetables.
- When the water boils, adjust the heat and cover the pan with a lid.
- Let the vegetables stew about 15 minutes, until tender.
- Grind everything with a blender.
- I'm showing a lean version of the soup.
You can use broth or chicken broth instead of water.
Milk or cream can be added.
I settled on a dietary option.
- When all the vegetables were chopped into mashed potatoes add liquid to desired consistency.
- Then season with salt and pepper. This is where the soup is ready.
