Let's cook
First, prepare the curd mass.
- we need 400 grams of cottage cheese of any fat content, but the fatter and softer the cottage cheese is, the more tender the cake will be.
- add 2 eggs to the curd
- 80 grams of sugar, if you are a sweet tooth, you can add more sugar.
- 20 grams of vanilla sugar
- a pinch of salt
- 20 grams of semolina
Beat everything with a blender until smooth.
We remove the curd mass to the side, and prepare the dough.
The dough cooks very quickly, so immediately turn on the oven to heat up to 190 degrees and prepare the baking dish.

Prepare the dough
- sift 340 grams of wheat flour into a bowl
- add 100 grams of sugar
- a pinch of salt
Mix, combine all the ingredients.
Dip cold butter in a dry mixture, and rub on a large grater. We need 150 grams of butter.
We periodically roll the butter in flour so that it does not melt.
We also mix the crumb with flour so that it does not stick together.
Next, mix everything, and grind it into crumbs.
We do this quickly so that the oil does not start to melt in our hands.
It turns out a small, free-flowing crumb, in which small pieces of butter come across, this is normal.
Transfer 2/3 of the dough into a baking paper lined dish. I bake in a 21 cm split pan.
We level and form the sides about 3 cm high.
Tamp the dough lightly.
Pour all the curd mass into a mold, evenly level it.
Cut 200 grams of pre-washed and dried strawberries into small pieces.
Sprinkle 1 tbsp. spoon of starch. Starch can be replaced with flour.
Mix gently so that each piece is covered with starch.
Put the strawberries on top of the curd mass.
Press down slightly.
Sprinkle the remaining 1/3 of the crumb over the strawberries.
Sprinkle evenly, do not pour out all the crumbs at once, so that it does not fall into the curd mass.
No need to tamp the top crumb.
We compare the sides.
We remove to bake in an oven preheated to 180-190 degrees for 50-60 minutes, until a beautiful golden color. My cake was baked for 60 minutes.
We take the finished cake out of the oven and let it cool completely in the form.
Cover the cooled cake with cling film and put it in the refrigerator for 2-3 hours, cool and stabilize. If you bake in the evening, then leave the cake in the form, in the refrigerator until morning.
After the refrigerator, the cake can be freed from the mold, it can be easily removed.
If desired, for beauty, the cake can be sprinkled with powdered sugar.
