Today I want to invite you to make a Milk Girl cake.
You can add different fillers between the cakes and the cream, in this recipe I will use pistachios.
Pistachios can be substituted for any nuts you like.
Various berries can be used instead of nuts.
Or do not add anything at all, but simply smear the cakes with cream.
In all variants, a very tasty, soft and tender cake is obtained.

Let's cook
- For 100 grams of butter
- Add 200 grams of condensed milk
- And 70 grams or 3.5 tbsp. tablespoons of sugar
Cook over medium heat, stirring constantly with a spatula.
The sugar should be completely dissolved. When the sugar has dissolved, bring the mass to a boil.
- Add 1 full h. a spoonful of soda
We mix, the soda immediately begins to be extinguished, the mass brightens and increases in size several times.
Remove the pan from the heat, stir, and when the soda reaction is over, we transfer the mass to the bowl in which we will prepare the dough.
While stirring, cool the dough to about 50 degrees.
The mass should be warm, not hot, so that the egg does not curl.
- Add one egg and mix until smooth
- Add the second egg
We also mix until smooth.
Then the dough is cooked very quickly, so do not forget to heat the oven to 180 degrees.
- Sifting, in two stages, add flour
- A pinch of salt
Stir until smooth.
In total, we need 220 grams or 11 tbsp. spoons without the top of wheat flour.
It turns out a soft, elastic, sticky, thin dough.
I will bake 3 cakes measuring 18 x 34 cm.
On the back of the parchment paper, I draw the outline of the cake.
Visually divide the dough into three parts, and transfer 1/3 of the dough to a baking sheet covered with baking paper.
We evenly level the dough on the paper, making a layer 18 by 34 cm in size. We can say we smear it.
The dough is very elastic and spreads easily.
We remove to bake in an oven preheated to 180 degrees for 7-9 minutes, my cake was baked for 8 minutes.
We check the readiness with a wooden skewer, pierce it, if it comes out dry, then the cake is ready.
Straighten the cake immediately, cut it along the edge on 4 sides.
We remove the scraps, if you wish, you can decorate the cake with them, or just eat them, they are delicious on their own.
Leave the cake to cool on the wire rack.
While the first cake is baking, we prepare the second.
Thus, we bake 3 cakes measuring 18 by 34 cm.
The cakes cool down very quickly.
Divide the cooled cakes in half.
- For the interlayer, I'll use salted pistachios. Pistachios must be chopped
Let's prepare the cream
- Put 350 grams of cream cheese or soft pasty cottage cheese without grains in a bowl
- Add 170 grams of condensed milk
- A pinch of salt
Beat everything well with a mixer until smooth and airy.

- Add 250 grams of sour cream
I use sour cream with a fat content of 20%, you can take more fatty sour cream.
Stir at low speed of the mixer until smooth.
Put the first cake on a plate. Install a detachable mold with acetate film.
Divide the cream visually into 6 parts and cover the cake with 1/6 of the cream.
Sprinkle the cream on top with chopped pistachios.
In total I used 75 grams of pistachios, 15 grams per layer.
- Cover with a cake, lightly press down
- Cover the cake with cream
- Sprinkle with nuts
- Cover with the following cake, lightly press down
And so, alternating cakes, cream and nuts, we form the whole cake.

We put the cake in the refrigerator to soak and stabilize for 6-8 hours, I usually put it away at night.
You can decorate the cake as you wish.
You can simply sprinkle the edges with crumbs made from scraps from the cakes.
Or prepare the cream separately and decorate the cake with it
- 250 grams of cream cheese
- 50 grams of cream, 35% fat
- 20 grams or 1 tbsp. a spoonful of powdered sugar
We begin to beat at the minimum speed of the mixer, gradually increasing the speed of the mixer to the maximum.
Beat until stable and airy.
First, cover the sides of the cake with cream, and decorate the cake on top along the edge.
I sprinkled the cake with chopped white chocolate on top.
Ingredients designed for cake measuring 17 by 17 cm, 8.5 cm high, weighing 1500 grams.
In 1 tablespoon without top - 20 grams of flour, with top - 30 grams.
In 1 tablespoon without top - 20 grams of sugar, with top - 25 grams.
