All ingenious is simple. And this cream cheese recipe is no exception. It is prepared in 5 minutes in the kitchen, and it comes to full readiness already in the refrigerator overnight.

The most important thing is to buy kefir in advance and not forget to put it in the freezer.

Such curd cream cheese turns out to be light, low-fat (mdzh in it is only 8%), with a delicate texture and slight sourness.

It goes well with breakfast for sandwiches, if you add salt and your favorite greens.

You can also make a thick curd cream for cake, cheesecake and pastries from it, if you add 1 can of boiled condensed milk or 1 glass of powdered sugar.

Cooking.

We take packages with kefir with a fat content of at least 3.2% (fresh kefir is mandatory) and freeze. We forget about kefir for one day, but it is better to keep it in the freezer for two days.

After freezing, kefir should become hard, like a stone.

Now we release the frozen kefir from the packages and transfer to cheesecloth with a sieve. The sieve must be placed so that it does not touch the bottom of the cup into which the whey will drain. Otherwise, the cream cheese will sour.

Gauze must be folded tightly in several layers, at least 4 layers.

When the kefir thaws, then you should wrap the ends of the gauze so as to completely cover the cheese mass and put it in the refrigerator.

In order to make it faster, you should put oppression on top of the mass. Oppression can be made from any plate and liter can of water.

Without oppression, the whey draining process can take up to one and a half days.

The yield of finished cream cheese from 1 bag of kefir is not more than 250 grams. Therefore, it is better to immediately take 2 or 3 packets of kefir so that you get more cream cheese.

The fat content of the cream cheese at the exit will depend on the fat content of kefir, and the taste of the cheese too.

You can calculate the fat content of the finished cream cheese like this:

in 100 gr. kefir-fat 3,2%
in 250 gr. cheese - fat content will be 8%

This cream cheese works well for light desserts and healthy breakfasts.
