It was not easy to visit Georgia, see Batumi, and just taste the national salad. During my trip to sunny Georgia, I set myself the goal of not getting better. Despite the temptations of the local cuisine, I managed to accomplish this feat.
I wonder how Georgians manage to eat so much. It is clear that their national dishes are especially tasty due to the fresh herbs and aromatic spices. But their portions, sorry, are unforgivably large. It's just not realistic to eat everything. The task is not so easy.
I easily ate one salad there, the recipe for which I now want to share with you.
I spied this recipe in one of the kitchens of Batumi restaurants. My husband and I went there for dinner and I ordered myself this salad. It looked beautiful and original, but the taste was juicy and satisfying.
The recipe for Georgian salad is pretty simple. I think everyone can repeat it. The basis of the salad is meat, or rather the neck is 200 grams. It is the neck that makes this salad tender and satisfying. Therefore, first you need to choose the right meat. Beef, lamb or pork - whatever you want (I prefer pork).
Also, in addition to meat, we need:
- canned red beans-1 can
- roasted walnuts-5-6 tbsp l. (these are 12-15 nuts)
- 1 red bell pepper
- cilantro-1 small bunch
- 1 x red onion
For refueling:
- garlic-1-2 cloves
- hops-suneli-1 hour l.
- apple or wine vinegar-1 tbsp. l.
- olive or vegetable oil-6-8 tbsp. l.
- pinch of salt
Preparation
- Boil the meat until soft, cool and cut into small pieces.
- Pepper seeds are removed and cut into strips. Cut the onion into half rings.
- Wash the cilantro, dry it with a paper towel, chop finely.
- Peel the garlic and knead it.
- Put the nuts in a dry frying pan, fry and grind.
- Drain all the liquid from the Beans.
- Next, combine meat, beans, peppers and onions in a cup.
- Add nuts, garlic, herbs, spices.
- Season the salad with apple cider vinegar sauce and olive oil.
- At the end, salt, mix and leave to brew.
