Pickled mushrooms: the best marinade for mushrooms

I love mushrooms. Especially mushrooms.
And what could be better than crispy spicy mushrooms? Of course homemade marinated mushrooms with a delicious marinade. Beautiful, fragrant, and are delicious.

Recipe Marinated mushrooms

From said lower quantities of products obtained (about) 1 liter jar fungi.

mushrooms:

Mushrooms - 1 kg.

Marinade:

Water - 1 liter
Sol - 1.5 - 2 tbsp. l.
Sugar - 2 tbsp. l.
Bay leaf - 2 pcs. (Or one large sheet)
Peppercorn - 5-6 pieces.
Allspice - 5-6 pieces.
Carnation - 5-6 pieces.
Garlic - 1 clove
Vinegar (essence, 70%) - 1 dessert (or part-time dining) Spoon

Preparation:

In a saucepan of boiling water pour our frozen mushrooms.
Cook for 10 minutes, and the broth was discarded. (If you want, you can save the broth and cook it on the soup or sauce. Then you need to remove the foam when the water starts to boil and the foam rises. Or, make the sauce: mushroom broth + cream + processed cheese, thicken with flour).

In saucepan with mushrooms again pour boiling water - 1 liter. This will be the marinade.


Add salt, sugar, garlic, cut in slices, spices.
Pouring spoonful of vinegar. Do not overdo it, especially if you do not like spicy marinade! Better then to add!

Here it is necessary to say a few words about the marinade... Try it - it tastes should be a little more sharp (sour) and a little more salt than you would like.
If not salty or badly - add a little salt / vinegar, guided by its taste.
The fact that fungi need time to prosolitsya.
Per day (while infused) they will take a salt, and will be just right.
Hot marinade seems more acute / salty
Cook the mushrooms in brine for 10-15 more minutes, turn it off and they can be directly hot shift in the bank.

Marinade should slightly cover the mushrooms, the remnants of the marinade can be poured (or save for the sauce).
After cooling in the refrigerator move bank - the next day (well, after 12 hours, five ...) may have.
