Usually this salad is prepared with boiled potatoes, but when potatoes get bored, you can prepare a salad with rice, this is its lightweight counterpart. This combination of tuna, rice and vegetables with a spicy dressing makes a delicious light dinner.
For the salad, we need:
- Tuna - 1 can in own juice
- Chicken broth - 1 glass
- Water - 1 glass
- Rice - 1 glass
- Garlic - 2 cloves
- Large green bell pepper - 1 pc.
- Cherry tomatoes - 300 gr.
- Green onions - 4 feathers
- Lemon juice - ½ cup
- Olive oil ¼ cup
- Dijon mustard - 1 tablespoon
- A head of iceberg lettuce, disassembled into leaves
Combine the chicken stock and water in a small saucepan and boil. Add rice there, reduce the heat, cover the pan with a lid and cook for 20 minutes until the rice is cooked and the liquid disappears. After the rice is cooked, transfer it to a large salad bowl. Let the rice cool down.
At this time, cut the pepper into small pieces. Halve tomatoes. Chop green onions coarsely.
Now you need to prepare the salad dressing. In a small bowl, stir together the lemon juice, olive oil, mustard, black pepper and salt.
Remove the tuna from the jar and cut into small pieces.
When the rice has cooled slightly, add bell peppers, tomatoes, onions, dill, tuna and lemon-pepper dressing.
Put the lettuce leaves in a salad bowl, put the salad on top of them. Decorate with red onion rings.
