I want to share with you a recipe for a delicious salad. Maybe some of you have read its original version in my performance and cooked it, if so, then you will like this version too.
If someone from the fasting is now reading the recipe, he will agree with me that you want to eat more in the post, than usual, so I try to diversify my menu and include nuts in it, because they are hearty and tasty)
In this salad I put tofu instead of goat cheese. Of course, the replacement is not equivalent, but in the absence of another opportunity, we will cook and eat this one.
For the salad I need:
- Beets - 3-4 pcs.
- ยท Tofu cheese - 150 gr.
- Pine nuts 50-100 gr
- A little arugula
I always prepare this salad in portions, using transparent small salad bowls, because if you put all the ingredients in one salad bowl, and then mix it again, you get a mess.
First, I cut the beets into cubes, then the cheese.
While I'm chopping vegetables and cheese, nuts are fried in a pan. Before you start frying them, try them. Very often in stores they are rancid, so it's better not to put anything than to ruin the taste of the salad with bitterness.
In salad bowls I spread layers of beets, a few leaves of arugula, cheese and sprinkle with nuts on top.
Pine nuts are not cheap, so how much you put in a salad is up to you.
Finally I add olive oil. Salad ready!!!
