I thought that sitting at home, during a pandemic, I would have a lot of time to try new recipes, to cook something unusual and tasty, but there was so much work at home that there was no time for the kitchen remains.
Today I cooked rice for a side dish, but the child flatly refused, saying that they were tired of rice, buckwheat, pasta and potatoes.
After a little reflection, I quickly found a way out - stuffed peppers.
Rice remained the main ingredient, but having beaten it, I got an excellent side dish, to which there were no more complaints at the table.
For stuffed pepper for 2 persons, we need:
- Sweet red pepper - 1 pc.
- Rice - 100 gr.
- Corn - 50 gr.
- Fried champignons - 100 gr.
- For refueling:
- Mayonnaise / olive oil
Or sauce
Everything is being prepared very quickly.
Chop the champignons finely and fry in a skillet. I love when mushrooms are cut into large pieces, but large mushrooms are more likely to be a disadvantage in this dish.
Boil rice until tender. Of course, the taste of the entire garnish will depend on the quality of the rice. I have been buying rice from an Indian store for a long time, but you can also find good Indian or Pakistani rice in a regular supermarket.
Cut the pepper lengthwise, peel and wash. Cut off a small piece and chop finely.
There is always corn at home. Because until the season and it is impossible to buy it on the cob, we are happy to eat it from the can.
Combine all ingredients (mushrooms, rice, corn, a slice of pepper), mix and fill the halves of the pepper. Sprinkle with dill and salt.
I poured a salad dressing (olive oil and balsamic vinegar) over the pepper. For me it is too bland without sauce or other additives, but you can add nothing. It all depends on your improvisation.
You can turn the side dish into a salad by adding a spoonful of mayonnaise to it.
So in 10 minutes, plain rice turned into an interesting side dish.
