Yesterday I cooked potato pancakes with mushrooms, but because I also want a salad for a hot dish during Lent, so I opted for a vinaigrette.
I cannot say that I am a big fan of this salad. Probably, I eat it only in fasting, but any dish cooked with my own hands begins to have its own unique taste).
For the vinaigrette, we need:
- Beetroot - 300gr.
- Potatoes - 200 gr.
- Pickled cucumbers - 100 gr.
- Red beans - 100 gr.
- Green onions - 5-6 feathers
- Carrots - 2 pcs.
- Green peas optional
Recently, boiled vegetables have begun to be sold in stores, which I am incredibly happy about. This not only saves a lot of time, but also solves the problem of washing dishes. So, I buy boiled beets and carrots.
Peel the potatoes and cook on the stove.
While the potatoes are boiling, cut the carrots and beets into cubes (I always chop the vegetables finely).
Then also finely chop the cucumbers, green onions and add to the salad bowl to other vegetables.
Open the beans, drain the liquid from the jar and add all / or not the entire jar to other vegetables.
The potatoes are boiled. We cut it into cubes.
Especially for such purposes, I always have a fragrant oil with a scent.
If not, then just pour over the vegetable. I usually use olive in all salads, but not in vinaigrette).
