The other day I watched the scene: my granddaughter asked my grandmother to cook a pie "well, remember, with berries, as you did then." Grandma answered her - wait, they say, sunshine, what kind of pies, in the apartment and so it is impossible to breathe, and also to heat the oven - we will die! When it gets colder, you have a pie.
In general, I am not a fan of pies, or rather, I do not like to cook them, a lot of fuss, little use. Before everyone had time to tell everyone that the pie was ready, the homemade ones came with spoons-forks, chlorine - and then the pie was gone. And they look at you indignantly: why so few?
But among the recipes of mom and grandmother come across very interesting and wonderful, which is not a sin to repeat. If not now, then a week and a half later, when already in our country, Moscow and the surrounding area (I am guided by my climatic zone when I write), berries will go massively at the dachas: currants, gooseberries ...
All in all, this recipe is good for berries that have a lot of pectin in them. And the cake is not baked in the oven.
So, we take:
- sugar - 2-4 tbsp. l,
- egg - 1 pc,
- mayonnaise - 0.5 cups,
- soda - 0.5 tsp,
- flour - about 100 g
We add soda to mayonnaise so that it “goes out”. Then mix with beaten egg and sugar, and, little by little, drive flour into the resulting liquid, adding with spoons.
As a result, the dough should come out pretty runny.
Now we pour it onto a greased, preferably non-stick frying pan, sprinkle with berries on top (about a glass), berries again, add sugar - a couple of spoons, and... cover with a lid.
We cook on the hotplate for about twenty minutes, you do not need to turn on the strong heat, the cake may burn, so be careful.
Minus - the top of the cake is not toasted and therefore not very beautiful. If you use berries with a high pectin content, the top will be prettier, especially when the cake is cold. If "watery" - then worse.
However, making a cake beautiful is not so difficult. In my childhood, there was enough powder for this. For pampered households, whipped cream is now used to the top of the pie or - if there is a desire to get confused and it is combined with the filling - lemon Kurd.
