Lahmajun is an amazingly tasty thing originally from Turkey. However, whether from Turkey - I do not understand, I will not say. Because lahmajun is found in other countries, the reception under very similar names - lamajo, lagmajo.
Translated simply - meat with dough. For some reason, lahmajun is called Turkish pizza. But we also have rolls in Russian, and are served - in the type of Japanese cafes.
Well, okay, this is the lyrics.
There are two options for making lahmajun. The first is to get confused with the dough.
It will take
• 2 cups of flour
• 1.5 cups of water (warm)
• 1 tablespoon dry yeast
• 1 spoonful of salt
• 1 spoon of sugar
We dilute the yeast in water with sugar, when the foam appears - pour the flour and salt, knead it, let it come up about forty minutes, we divide into balls (they still need time to prove) and - voila, we roll onto thin balls tortillas. They will become the basis of the delicacy.
The size of the cake is about an average plate.
But if you are too lazy - take thin lavash, and that's all. You can fold it in half by smearing the layers with a beaten egg. Or simply - milk. The only thing, of course, is to cut the pita bread to size.
Then we prepare the filling:
• 500 grams of meat
• A couple of juicy tomatoes
• Good juicy bell peppers
• A good onion (not spicy)
• A bunch of greens to taste
• Salt and spices to taste too
The trick is that the filling is put on the cakes while still raw.
That is why we peel the tomatoes and... We turn all the ingredients into minced meat, it is possible - homogeneous. If you don't like this idea, then we turn everything except sweet pepper into minced meat, and cut the pepper into small cubes.
Then we spread it either on flat cakes, rolled out according to all the rules, or on a lavash substrate. Oh yes, pre-cakes (or a lavash substrate) on a baking sheet are necessary.
We spread the filling in a thin layer, because this charm will be baked for only 5-7 minutes at a temperature of 200 degrees.
Traditionally, lahmajuns are eaten curled up and sprinkled with lemon juice. But since we have everything at minimum salaries, you can cut it into pieces - as it is more convenient for someone.
