Do you think that if you buy only expensive boiled sausages, you are eating a real Doctor's? I have to disappoint you - hardly any of our contemporaries knows the taste of the “very” sausage that was once invented to support the proletarian forces.
Even if the packaging proudly flaunts "produced in accordance with GOST 1936" (optional - 37, 38 years).
I here decided to look for this GOST - in the hope that at least in Cyberleninka it could survive, but... I discovered that it is not there! And it could not be, since the first GOSTs actually appeared only in 1940 (there was a paradox, there was a system, there were no GOSTs).
And later GOSTs for "Doctor's" are of little interest, although, according to the infe wandering in the internet, they changed during the existence of the USSR they were at least three times - in 46 (GOST 3324-46) in the early seventies (they were allowed to add starch, although I did not specify), and 1979.
GOST 1979 is most often cited as a reference, although little remains of the original recipe (especially if you take into account the notes).
And then one lucky day was lucky. They sent me scans of a real treasure. The most beautiful, most wonderful album released by the Nakrompishcheprom of the USSR in 1938.
This album contains obligatory (I emphasize, obligatory) recipes for meat products and... So that I eat like that, gentlemen!
True, the same "Doctor's" sausage, cooked according to a 38-year-old recipe (as the connoisseurs suggested to me, this recipe migrated to GOST 1946) contained nothing at all.
For one hundred kilograms of prefabricated meat:
- Beef meat - 15 kg
- Low-fat pork - 60 kg
- Fatty pork - 25 kg
Spices came:
- Salt - 2 kg 500 gr
- Sugar - 100 gr
- Cardamom - 30 gr
Well, more saltpeter was added, 30 grams

As you can see, neither water, nor milk, nor even ice cream was included in the recipe, which means that this sausage was not only the taste, but even different in consistency. It was much denser and drier (not in the sense that it was dried, but simply drier).
So if suddenly someone, sometime before the GOST change, had to try it - then yes, it should have tasted wonderful. Well, when now on the shelves you notice a sausage of the usual kind with the inscription - according to GOST 36 (37, or there is 38 years old), and it looks like an ordinary "Doctor's", then you should know that you are being deceived.
