The pies are like in the "Market", under this name they are written in my cookbook, the recipe was given to me long ago by a woman. She went every day at the same time to organizations and offered pies to employees. They always sold well with her, and she cooked them from this dough. And today I will share with you an unusual filling of pickled cucumbers, which I discovered not long ago: unusual, but very tasty.

Recipe:
For the test:
Flour -400gr.
Water -320 ml.
Dry yeast -5g.
Sugar -1 tbsp
Salt -1 / 2 tsp.
For filling:
Pickled cucumbers -400gr.
Onions -1-2pcs.
Rice -70 gr.
Sift 400 grams of flour into a bowl, add dry yeast 1 tsp, or 5g, add half a tsp. salt, 1 tbsp. sugar and mix everything.
Now pour in 320 ml of water, gradually. The dough should turn out to be liquid and sticky, so we do it all with a spoon. We no longer add flour, it should be so. We remove the dough in a warm place for 1-1.5 hours.
During this time, we will prepare your favorite filling. Today I have a pickled cucumber, unusual, but delicious. Boil 70 grams of rice in salted water until cooked, leave to cool. Cut two small onions into cubes. Grate 400 grams of cucumbers.
We take a frying pan, pour a little vegetable oil, put onions and fry until translucent, now add cucumbers and simmer everything together 10 minutes, until the liquid evaporates, now add the pre-cooked rice, mix, add black pepper to taste and remove from heat. Let the filling cool.
The dough has already increased in volume, it suited me for 1 hour and 20 minutes. We don't use flour. Therefore, grease the table and hands with vegetable oil. Knead the dough and divide into parts. From this amount of dough, I get 13 pies.
We take one piece of dough, make a cake, put the filling and collect the edge like a bag, crush it and get such round pies. The dough will be a little more difficult to handle than regular patties, but believe me the result is worth it.
Pour vegetable oil into the pan, heat it up.
Be sure to fry the pies over medium heat so that they have time to cook on both sides until golden brown.,
Since the pies are very tasty, I make 2 servings at once, the second filling is sausage.
Serving pies with sweetened tea. Soft, airy, aromatic and so delicious.
