Hello, dear readers of the "Cooking with Natalia Kalinina" channel! I greet my regular guests, as well as all those who came to see me for the first time!

Today I am sharing the recipe for Karelian gates. These are incredibly delicious filled open pies. Neither yeast nor baking powder is needed here.

Recipe:

For the test:

Rye flour -150g.

Wheat flour -150 gr.

Salt -1 / 2 tsp.

Kefir -250ml.

For filling:

Potatoes -1kg.

Salt -1 tsp

Butter -50g.

Milk -100 ml.

Egg -1pc.

To fill:

Sour cream -150g.

Egg -1pc.

Salt -1 / 3 tsp.

COOKING METHOD

First, peel 1 kg potatoes and cook until tender in salted water.
During this time, we will prepare the dough. We take 150 g of rye flour and 150 g. wheat flour, add half a tsp. salt and mix.

Now pour in kefir 250 ml. And knead the dough. If you wish, you can make the dough only from rye flour. The dough should be elastic and not sticky to your hands.

You may need some more flour. We put the dough in the refrigerator while we prepare the filling.


The potatoes are boiled, drain them, add 50 grams of butter and turn into mashed potatoes. Now pour in milk and break 1 egg. The puree is ready, let the filling cool down a little.

We take out the dough and divide it into 18 pieces weighing 30 grams.

Now take one bun and roll out a saucer-sized circle. Put 1 tbsp of mashed potatoes in the middle, level. Now we pinch the edges as in the video below. You should get such a basket.
Put on a baking sheet.

Prepare the filling, measure out 150 grams of sour cream, break 1 egg and add a pinch of salt. Beat with a whisk. Fill in about 1 tablespoon each.

We put in a preheated oven and bake at 220 degrees for 15-20 minutes, until the filling is golden. We take it out of the oven and serve it to the table. Very tasty and satisfying. I recommend cooking.
