Homemade cheese, which is prepared in Siberia in the Omsk region. I have never met such delicious cheese as they cook here. Not one holiday is complete without this cheese. And moreover, he does not linger on the table.
COOKING METHOD
We take a large saucepan. It is better to take a reliable saucepan with a thick-walled bottom so that nothing burns to it during the cooking process. Pour 2 liters of milk into a saucepan.
We put on fire and bring to a boil. As the milk boils, add cottage cheese 1 kg 300g. Bring to a boil. Whey should form during heating.
As the cottage cheese starts to boil, I boil for 5 minutes and remove from heat. Immediately throw the mass onto cheesecloth. Let the serum drain for 5-10 minutes. I don't wring it out with my hands, the cottage cheese should not be too wet but not dry either.
Put in a saucepan, add 100 grams of butter and stir to melt the butter. Now we break 2 eggs, add salt 1 tsp. with a slide, an incomplete tsp soda and I always add a little lemon acid, to be sure that the soda is extinguished and the finished cheese will not give off soda and be sure will melt.
Mix everything well. We put a saucepan on the stove, pour water, as the water boils, put a saucepan with cottage cheese in a water bath and cook, stirring constantly until melted. You should get such a viscous mass. It takes 15-20 minutes.
Now when the cheese has melted add 1 tsp. caraway seeds and mix. Caraway will give a special flavor to the cheese. Prepare the mold in advance and put the cheese in it. I have a form measuring 28 cm by 14 cm.
We level it with our hands. Cover the top with cling film. Let the cheese cool at room temperature and then put it in the refrigerator until it solidifies.
Now we remove it from the mold, you can cut it and taste it. From this amount, it turns out ready-made cheese 1 kg 200g.
