Today I am sharing a recipe for pies that do not absorb oil when frying. They turn out to be not greasy at all, I pour oil into the pan once and fry all the pies without adding. Of this amount, 30 pies are taught. I cook the dough without yeast, so it is ready right away, just kneaded and you can immediately start forming pies.

Recipe:
For the test:
Egg -1pc.
Salt -1 / 2 tsp.
Sour cream -2c.l.
Kefir -500 ml.
Soda -1 tsp
Flour -600-700gr.
Carrot filling for pies:
Carrots -400gr.
Sugar -2 tbsp
Apples -2pcs.
Walnuts are a handful.
Lemon juice -2-3 tbsp.
Butter -20g.
Eggs with onions:
Green onions - 1 bunch
Eggs -6 pcs.
Salt -1 / 3 tsp.
COOKING METHOD
Break 1 egg into a bowl, put 2 tbsp. sour cream, pour in 500 ml of kefir at room temperature.
Measure out 600 grams of flour and add 1 tsp. soda, mix. And now we sift the flour with soda into kefir, knead the dough. You may need more flour, it all depends on the size of the egg and kefir. Today I needed another 100 grams. The dough should be soft, slightly sticky to your hands.
We remove it for 15-20 minutes while we prepare the filling.
The first filling I have today is carrot, I cook like that. Grate 400 grams of carrots on a coarse grater. Put a little butter in a pan, put carrots, 2 tbsp. sugar and simmer until soft. Cut a handful of walnuts, grate 2 apples on a coarse grater. Add apples, nuts to carrots, add lemon juice about 3 tablespoons, a pinch of salt. Stir and remove from heat. Let the filling cool slightly.
The second filling is eggs and onions. Cut a bunch of green onions, put in a bowl, add a little salt and now we remember the onion a little. Boil 6 eggs and cut into cubes, add to the onion. Stir the filling ready.
Roll the dough in flour and divide it into parts. I divide it into 28-30 pieces weighing 50 grams. If the dough sticks a little, then you need to dust it with flour.
We take one cone and roll out a circle, put the filling and pinch the edges. This is how we form all the pies. Pour vegetable oil into the pan and heat well. Put the pies and fry them under the lid on the fire a little over medium.
If you fry on low heat, the pies will not rise very much and as a result they will not be so fluffy and will absorb oil. I have 9 modes on the stove, I bake on 7 modes. The dough has time to cook well, and the pies rise well. I do not add oil during frying, it practically all remains in the pan.
I serve the pies with the heat to the table. Soft, very tasty and not greasy at all.
