Today I want to share a recipe for a cheesecake with nuts and caramel. For my taste, this is the most delicious cheesecake I have ever made. Just imagine, a lot of nuts and caramel, in a nutshell, heaven for sweet tooth.

For the basics:

Cookies -200gr.

Butter -80 gr.

For the cream:

Curd cheese -400gr.

Powdered sugar -50-100g.

Eggs -2pcs.

Cream 33% -100ml.

For caramel:

Sugar -150gr.

Butter -40g.

Hot cream 20-30% -100ml

Roasted hazelnuts-100-150gr.

Cooking method

It is not difficult to prepare and so we proceed. We take the chocolate chip cookies, I take the oreo, remove the filling. The weight of the peeled cookies is 200 grams. Grind cookies into crumbs using a blender. Boil 80 grams of butter in a microwave oven and pour into the crumb. We mix. We take a form with a diameter of 20 cm. We put the crumb and distribute it along the bottom and make a side about 5 cm high.

We put in the preheated oven and dry the base there at 180 degrees for 5-7 minutes. During this time, we will prepare the filling. Put 400 grams of curd cheese in a bowl, pour in 100 ml. heavy cream, I have a fat content of 33%, break 2 eggs, Mix everything until smooth, but in no case do not beat.

Now add powdered sugar 3 tbsp. or add to taste. By weight, it is about 80 grams.

Mix, the filling is ready. We take out the base from the oven and pour the filling into it. The form should be wrapped in foil if it is removable like mine. We put the mold in a baking sheet, which is larger and pour water into it.

We put in the oven and bake at first at 130 degrees for 30 minutes, then we add the temperature to 170 and bake until tender, orient yourself in your oven. It takes me 50 minutes.

Now open the oven and leave the cheesecake to cool.

While the cheesecake is being prepared, the pie is preparing the caramel. Pour 150 grams of sugar into a saucepan. At this stage, do not stir the sugar, wait until it starts to melt, now stir until it is completely dissolved. And we boil a little, but the main thing is not to burn the sugar, otherwise there will be a burnt aftertaste. Now add 100 ml of cream, I add 20% fat. At this point, it is better to remove the stewpan from the heat, as too much mass begins to boil.

Now add 40 grams of butter. Remove from the fire as the butter melts. Leave the caramel to cool to room temperature.

Sprinkle the cooled cheesecake with pre-fried hazelnuts. Now pour over the cooled caramel. We put it in the refrigerator until it cools completely.

I put it away overnight and the next day the cheesecake is ready. Cut into portions and serve with tea. This is delicious. Cook you will definitely like it.
