Today I want to share a recipe for a delicate cake "Apple Clouds" This is an insanely delicious cake that can easily replace any cake. Falls in love with herself from the first bite, sour apple filling and delicate biscuit cakes. Try it.

For biscuit: (baking sheet 30cm by 40cm)

Eggs-4pcs

Sugar -180gr

Vanilla sugar Dr. Oetker -1 pack

Flour -120g

Starch -50g

Baking powder -2h.l

Butter -100gr

For apple filling:

Apples -1.3kg

Sugar -180 gr.

Lemon juice -1 / 2-1pc

Vanilla sugar -1 pack

For the cream:

Curd cream -300g

Whipping cream 33% -150ml

Sugar -50-150gr

Impregnation syrup:

Boiling water -50ml

Sugar -50g

Lemon juice -1 / 2pcs

For chocolate glaze:

Chocolate -40gr

Cream -20ml

Decorative dressing - 1 pack

COOKING METHOD

First, let's prepare a biscuit.

We measure 120 grams of flour, add 2 tsp baking powder, I have baking powder right away with vanilla. Add 50 grams of potato starch. Stir and leave aside.

Break 4 eggs into a bowl, add a pinch of salt and beat until foamy.

About 2 minutes, now gradually add sugar and vanilla sugar. Beat for another 5 minutes. Now add flour with baking powder and starches in 2-3 doses, mix with a spoon, you cannot mix with a mixer. Melt 100 grams of butter in advance, pour into the dough. We mix. The dough is ready.

We take a standard baking sheet from the oven, I have 30 by 40 cm, pour the dough, evenly distribute and put in the oven. We bake at 180 degrees for 30 minutes or navigate by your oven.

Readiness can be checked by clicking on the biscuit, if when you click on the biscuit it returns to its original position, then it is ready. Let it cool down. I want to note that the biscuit is always smooth for the recipe served.

Let's take up the apple filling, peel the apples weighing 1,300 grams and rub them on a coarse grater. We add lemon juice to the apples, I like the filling to be sour, so I add 1 lemon. Put in a saucepan, it is best to use a non-stick coating or a frying pan. Add 180 grams of sugar, vanilla sugar.

Stir, put on fire and cook over medium heat until the liquid evaporates and thickens, it takes me 35-40 minutes. Now we punch everything with a blender until smooth and remove from heat, let it cool.

Let's prepare the cream, put 300 grams of curd cheese and 150 grams of whipping cream in a bowl, the fat content is not less than 33%, I have homemade ones today. We add sugar to taste, I add about 50 grams. Beat with a mixer until thick. The cream is ready.

Let's prepare the impregnation syrup. You can take apple juice, I do lemon soak. I take 50 ml of boiling water, add it. 50 grams of sugar and stir until dissolved. Now I add the juice of half a lemon. Stir and let the impregnation cool.

Let's start assembling. Cut off the edges of the biscuit and divide it into 2 equal rectangles.

Impregnate 1 cake and put the apple filling, distribute evenly. We put the second cake layer and saturate it. Lubricate with cream. You can only lubricate the top, I lubricate both the sides and the top.

take 40 grams of chocolate, add a little cream and melt.

Now let's apply a chocolate mesh to the top. Sprinkle with decorative sprinkles on top.

Let's soak.

Now we cut into portions. We serve for tea. It turns out incredibly tasty, I recommend cooking, everyone will be satisfied.
