Surely everyone in childhood made sugar candies in a spoon. My brothers and I also cooked, but at some point we decided to experiment and went on. We tried to cook tangerines in caramel.
At that time, I did not fully understand how to properly prepare caramel. and my brothers and I acted on a whim. Therefore, tangerines were not always obtained. Now I understand that we either did not cook the syrup, or, on the contrary, burned it. Now I know how to make caramel and it was not difficult for me to make tangerines in caramel.
Step-by-step recipe on how to cook tangerines in caramel
Peel the tangerines and remove all the "villi".
I take sushi sticks and put tangerines on them. The cheapest sticks, which are connected on one side to each other, are best suited.
Now I'm going to make the sugar syrup. To do this, I mix sugar with water and send it over medium heat.
After boiling, I lower the temperature: if I cooked it over medium heat before boiling, then after that I lower it to ΒΌ the power of the stove. Syrup can burn over high heat.
I cooked the syrup until tender for about 12 minutes (or 5-7 minutes after boiling). But it is better to check with a thermometer, it should show 140 Β° C. If there is no thermometer, you can check as follows.
I pour cold water into a glass. I remove the syrup from the fire. I pour a little syrup into the water with a teaspoon. If the syrup is frozen in the water, then it's ready.
I return the syrup to the lowest heat, tilt the saucepan slightly so that the syrup accumulates in the corner. I dip the tangerines in caramel one by one, take out and twist the stick so that the excess syrup runs out.
Gently, do not put your fingers under the dripping syrup and do not pick up the tangerine. At this point, the syrup is very hot, remember, I heated it to 140 Β° C.
I leave the tangerines to cool for 10 minutes, for this I poured sugar into a glass and put sticks in it. You can stick it into a loaf of brown bread or Styrofoam. Use what is at hand.
After cooking, pour the saucepan with the remaining syrup with hot water and bring to a boil so that the sugar dissolves and the saucepan can be washed.
