I tell and show you how to make a concentrate for Baikal lemonade from basil, water and sugar.

I love homemade lemonades, I don't even look at the store ones. I already shared a few lemonade recipes with you this summer, but recently I found something new.

I came across a cordial. CordialIs, in simple terms, sugar syrup with added juice. There are also variants of cordials on elderberry or tea.

As it turns out, cordials are quite popular with bartenders. They use them to make alcoholic cocktails. I hardly drink alcohol, so I will use cordial as a concentrate for lemonade.

Today my lemonade is not simple, but with a very famous taste - Baikal. You've probably tried this soda, and I suggest making it at home. I will not delay, let's cook!

Step-by-step recipe on how to make Baikal lemonade at home

Cordial

  • Basil purple 60 g
  • Sugar 150 g
  • Water 150 g

My basil, dry it and remove the leaves from the branches. You can not get rid of small branches at all, but it is better to remove thick ones. I transfer the leaves to a tall and narrow container.

I send sugar and water into a ladle and put it on fire. I cook the most common sugar syrup. When the syrup has boiled, I boil it for 2 minutes and pour it into a container for the basil.

I punch the mass with a blender until smooth. When the basil turns into gruel, I filter it through a fine sieve.

The resulting syrup is cordial, or concentrate. I put the cordial in the refrigerator and store it for a couple of weeks.

Now let's tell you how to make a drink from basil cordial, which is familiar to all of us - “Baikal”.

For one portion of "Baikal" you will need:

  • Cordial 50 ml
  • ¼ lemon juice
  • Sparkling water 150 ml

I pour 50 ml of cordial into a glass. I add the juice of a quarter of a lemon.

Juicing a quarter of a lemon is easy. To do this, I make transverse cuts on a lemon wedge. Then I put the wedge on the knife and squeeze the lemon with my fingers. The juice will flow over the knife, and you can immediately direct it into the glass to the cordial.

Now I add cold soda water, some ice, and you can serve.

For my wife this proportion was too sweet, so I added a little more water. In general, adjust the amount of water to your liking.
