I watched my mother-in-law make a cake from the simplest ingredients. I decided to repeat it, and that's what I did.
Recently I was visiting my wife's parents and saw how my mother-in-law made a Ryzhik cake. At its core, this is Honey cake, with the exception of the cream. Here, instead of sour cream, a classic Soviet cream with butter is used.
I liked the cake, I decided to make it at home. I was especially attracted by the fact that all the ingredients are simple, from the category of “always at home”.

Step-by-step recipe on how to make Ginger cake
Ingredients
- Eggs 2 pcs
- Sugar 1 glass
- Butter 100 g
- Honey 2 tablespoons
- Soda 1 teaspoon
- Flour 3 cups
Cream
- Butter 250 g
- Condensed milk 1 can (370-380 g) I used boiled condensed milk
All the ingredients for the dough, except for flour and soda, are sent into a ladle and put on medium heat. It is better to cut the butter into small cubes so that it melts faster.
While the mass heats up, I constantly stir it so that nothing burns. As soon as the sugar dissolves, add the baking soda. At this moment, the reaction will begin, and the mass will increase in volume.
When the reaction subsides, I remove the pan from the heat. I mix flour in 3 stages. After the third glass, it becomes difficult to stir the dough with a spoon and I continue kneading on the table with my hands.
I wrap the dough in plastic wrap and put it in the cold for 1 hour. I divide the cooled dough into 8 identical parts. Roll each portion into a layer, prick with a fork and bake at 200 ° C for about 5 minutes.
I cut the still hot cakes into a cutting shape 20 cm in diameter. The mother-in-law cut out along the edge of the plate. Dry the cakes in the oven at 130 ° C for about 20-30 minutes, and then grind them into crumbs with a blender.
For cream, whisk butter at room temperature until fluffy, add condensed milk in several stages. Beat for 2-3 minutes until creamy.
I coat the cakes with cream and put them in a cake. I leave a little cream to cover the top and sides of the cake. At the end I sprinkle the cake with crumbs and put it in the cold for 2-3 hours.
My cake turned out to be a little dry, unlike my mother-in-law's version. It turned out that I missed the moment when my mother-in-law soaked the cakes with syrup. My wife liked the cake in this form. Better yet, make a syrup with honey, water, and cinnamon and saturate the cakes before assembling.
