"Mother-in-law's tongue" from eggplant

A delicious appetizer that will not leave anyone indifferent - "Mother-in-law's tongue" from eggplants. You can have enough of it, because it is so hard to stop.

From the eggplants themselves, you will need to cut oblong plates that will imitate the very "tongues" stated in the recipe. We will grease them with mayonnaise, after mixing it with garlic, cheese and herbs. Be sure to add juicy ripe tomatoes, as a result, the appetizer will have a gastronomic taste, which seems to be not too refined, but incomparable. It is good as an addition to potatoes or meat dishes.

Ingredients:

Eggplant (large) - 1 pc.

Mayonnaise - 3 tablespoons

Garlic - 2-3 cloves

Tomatoes - 2-3 pcs.

Cheese - 30 g

Salt, pepper - to taste

Vegetable oil - 40 ml

Greens - optional

Description of the cooking process:

1. Prepare all the required ingredients according to the list.

2. Rinse and dry the eggplant, trim the tails. Cut into not very thick plates, if they are bitter, then sprinkle them with salt, leave them alone for 15 minutes. When they start up a brownish liquid, it must be drained, and the eggplants should be rinsed and dried. If they are not bitter, no additional manipulations should be done.

3. Heat a fairly large amount of vegetable oil in a frying pan, immediately pour in 40 ml, then look at blue, since they absorb a lot of it into themselves, it may be necessary to add more process. Arrange dry eggplant plates in a frying pan, fry on both sides until golden brown. Wipe off excess oil with kitchen paper towels.

4. Put mayonnaise in a bowl, add garlic skipped on the press, a little chopped greens and cheese grated with small shavings. Stir all the ingredients well, remove a sample, and adjust the taste if necessary.

5. Grease each fried eggplant "tongue" with mayonnaise.

6. Wash and dry the tomatoes, chop. Place one circle on each plate of eggplant.

7. Wrap it in a roll, so that in the end the tomato is inside.

8. That's all, "Mother-in-law's tongues" are ready to serve. The appetizer is very tasty, it will certainly please all guests and relatives.
