Kruchenyky - a dish of Ukrainian cuisine.

Meat for kruchenyky (usually beef or pork), bounces, and then wraps them stuffing, roll tied with a thread.
You can saute and then simmer.

In the regions of Ukraine are preparing kruchenyky with different fillings: rice, onions, eggs, dried apricots, prunes...

Often used in the mushroom stuffing. Plenty of room for experimentation - is huge.
For example, for a hearty kruchenyky in Volyn first stewed meat until half, then put a piece of bacon on it, covering the top of sauerkraut, and wrapped.

Today we will prepare kruchenyky with dried mushrooms.

Recipe with mushrooms kruchenyky

Ingredients:

Pork chops or steak, boneless - 6 pcs. (Approx. 100 grams)
Dried mushrooms - 15 g
Boiling Water - 400 mL
Sour - 150 ml
Hard cheese - 50 grams
Onions - 1 pc.
Vegetable oil - 6 tablespoons. l.
Starch - 2 h. l.
Salt and freshly ground black pepper - to taste

Preparation:

First, you need to cook mushrooms. Fill mushrooms 400 ml of boiling water and boil for one hour.

Merge finished with water fungi (not pour), cut into small pieces.

Heat the pan with the 2 tbsp. l. vegetable oil, spread the chopped onion and fry until soft.

Then add the mushrooms to the pan and fry all together no more than 5 minutes.

Remove from heat and leave to cool.

Getting to the meat. Through the plastic wrap repel both sides of chops.

Sprinkle on both sides with pepper and salt.

Rub on a fine cheese grater, mix with onions and mushrooms.

In the center put the filling burgers and turn to roll.

You can lock kruchenyky toothpick so that it does not expand during cooking.

Heat the frying pan with the remaining olive oil and fry one by one kruchenyky on all sides until golden brown.

We spread all kruchenyky in the pan, pour a third of the liquid in which the cooked mushrooms, cover with a lid and tormented 5-10 minutes on low heat.
We shift kruchenyky on a plate.

In the same pan, pour the remaining water in which the cooked mushrooms, do the maximum fire and evaporate until there is ΒΌ of the initial amount.
Pulling out kruchenyky toothpicks.
Add the cream to the pan, bring to a boil and spread kruchenyky.

We spread out the sauce on the plate. Add the sauce 50 ml of water, mixed with 2 hours. l. starch.

Cook until the sauce thickens and pour them kruchenyky.

Serve at the table with your favorite side dish.

Or without it.
