After I got married, my mother-in-law decided to take me tightly into circulation. She almost stopped making jam, and gives us all the berries from the site. Recently, she has ripened several beds of strawberries.
Not that there are a lot of berries, but there are 3 buckets. Our family of three cannot quickly eat such an amount, so we have to make preparations. I processed a part into confiture (I will leave a link to the recipe at the end of the article), but I froze most of it. Let me tell you how I do it.
How to freeze strawberries at home
First of all, I wash the berries and wipe them thoroughly with napkins so that the berries are completely dry.
It is important. If the berries are wet, they will stick together when frozen.
The second step is to get rid of the ponytails. I got the strawberries from my beloved mother-in-law, and she, apparently, has such a variety that it is easier to pull out the stalk. Cut off the purchase faster.
I put the strawberries on the plates. In the center of each plate, I preliminarily lay out the culinary cutting ring.
If there are no such rings, you can cut them from plastic bottles. I spied this advice from my friend Elena Tanko, who also leads the channel in Zen.
Plates can now be stacked on top of one another and will take up less space in the freezer. Put it in the freezer and leave it to freeze completely.
I have a super frost freezer (fast freezing). Usually the freezer is -18 ° C, and with this mode, the temperature drops to -21 ° C. Thanks to this, freezing is faster. Although you can preset -32 ° C and then it will take even less time.
When the berries are frozen, I transfer them to zip-lock bags and put them back in the freezer for storage.
How to freeze strawberry puree
With mashed potatoes, I do the following. First, I punch the berries in a blender, then rub them through a fine sieve to get rid of the seeds.
I pour the puree into ice freezer containers. After complete freezing, I transfer the bags to the zip-lock and put them away for storage.
I used to freeze just in bags, but this method is more convenient for me. One cube weighs ~ 20 grams. Thus, it is easier to take the right amount, and defrost much faster.
