Rice porridge lovers will definitely like this recipe. After all, a casserole of rice with minced pork and vegetables is a very satisfying, healthy and tasty dish. Often it is served on a festive table, but you can also delight your household with it on weekdays.
The casserole is delicious both cold and hot. It is convenient to take it with you for a wonderful snack to study, work or a picnic.
When choosing meat, give preference to homemade pork. You can buy it in specialized stores or on the market. Wild rice, red rice, or black rice can be used to add variety to your meal.
Ingredients:
Rice - 1 glass
Pork - 450 gr.
Broccoli - 250 gr.
Onions - 1 pc.
Tomatoes - 200 gr.
Green onions - 30 gr.
Wheat flour - 100 gr.
Egg - 2 pcs.
Vegetable oil - 30 ml
Salt, black pepper, spices - to taste
Preparation:
1. Prepare all the required ingredients according to the list.
2. Pour the rice groats into a heavy-bottomed saucepan and cover with water in a 1: 2 ratio. Add salt and cook for 12 minutes after boiling. Next, let the rice cool slightly. You can add butter at this stage. Then transfer it to a deep bowl, break eggs there, add salt and spices to taste.
3. Mix well and add chopped green onions. It can be substituted with parsley, cilantro, or garlic.
4. Mix, add sifted wheat flour (or pea / oat / rice) and stir again until smooth. Place half of the rice in a baking dish on the bottom, spreading evenly with a spoon or spatula. Wash broccoli, divide into inflorescences and boil for 2-3 minutes in water. Then place on top of the rice.
5. Wash the pork under running water, clean it of veins, films and excess fat, if any. Cut into medium pieces and grind them with a meat grinder or food processor. You can skip minced meat, just chop it finely. Cut the tomatoes into pieces and place them together with the pork in a preheated pan with vegetable oil, add salt, black pepper and spices to taste. You can use chicken or beef instead of pork.
6. Fry the meat with tomatoes for 7 minutes over low heat, stirring occasionally. Peel the onions and cut them into random pieces. Add it along with black pepper to taste to the pan with the meat.
7. Simmer for 5 minutes over low heat with the lid closed. Next, spoon on top of the broccoli.
8. Spread the rest of the rice mass evenly over the meat and vegetables.
9. Place the form in a preheated oven to 180 degrees for 25-30 minutes. After the time has passed, remove the cooked rice casserole, cut into portions and serve.
Put tomato or sour cream sauce on the table with the dish.
